    eggs, whisked

    milk
  • smooth apricot jam

    brandy

    brandy

    boiling water

Method

Sift the cake flour and baking powder together and rub in the butter. Add the eggs, followed by the milk and mix to form a stiff dough. Roll out thinly on a floured surface and spread with the apricot jam. Roll up and slice. Mix all the ingredients for the sauce and pour into a well-greased flat-bottomed black pot. Arrange the dough slices on the bottom of the pot. Cover with lid and bake for 45 minutes on a stand over slow coals (arrange more coals on the lid and fewer underneath the pot), Replace the burnt-out coals on the lid with fresh coals if necessary. Serve with custard. Serves 6.
