    turkey (ask you butcher to debone it)

    slices ham
  • DELMARIE'S STUFFING
  • 1
    can chestnut purée
  • 125
    g
    breadcrumbs
  • 500
    g
    pork sausage meat, squeezed from their casings
  • 1
    egg
  • plenty of chopped parsley
  • 2
    onions, chopped
  • chopped garlic to taste
  • 75
    g
    chopped walnuts
  • 30
    ml
    brandy
  • 50
    g
    melted butter
 

Method

 
STUFFING: Combine all stuffing ingredients and mix thoroughly. Lay turkey down flat and season. Place ham across centre and lay a fat 'sausage' of stuffing down centre. Fold turkey over stuffing and sew closed. Tie turkey roll at regular intervals to give a neat shape. Weigh and calculate roasting time, allowing 25 minutes for every 500 g, plus an extra 15 minutes. Roast at 180 ºC.
