Rocky road cookies

    light brown sugar

    castor sugar

    large eggs, beaten
  • 3

    vanilla essence
  • 200

    white bread flour
  • 15
    ml
    cocoa powder
  • 2
    ml
    bicarbonate of soda
  • 1
    ml
    salt
  • 100
    g
    milk chocolate, chopped
  • 50
    g
    walnuts, chopped
  • 60
    g
    mini marshmallows
 

Method

about 17 minutes
 
Beat butter and sugars until light. Add eggs, a little at a time, beating well after each addition. Add vanilla essence. Stir in flour, cocoa, bicarbonate of soda and salt. Add half the chocolate and nuts and mix until well combined. Drop spoonfuls of mixture onto greased baking trays. Make sure they are well spaced as biscuits will spread. Bake for 10 minutes in preheated 180 °C oven, remove from oven and sprinkle with remaining milk chocolate and 60 g mini marshmallows. Return to oven for a further five minutes then allow to cool on baking tray. Remove carefully with a palette knife and allow to cool on a cooling rack.
