Rocket and pistachio pesto

Use wholesome avocado oil to make this delicious pesto.

Ingredients

 
  • 2
    cloves
    garlic
  • 100
    g
    pistachio nuts, shelled (about 60g without shells)
  • 60
    g
    rocket
  • 40
    g
    Parmesan cheese, grated
  • 250
    ml
    avocado oil
Servings: Change Serving
 
 

Method

 
Grind the garlic to a paste with a little salt. Place the nuts in a food processor and pulse until fine. Add rocket and pulse to a coarse paste. Scrape out into a bowl, and stir in the garlic, Parmesan cheese and oil. Taste and season if necessary. Stir the pesto into warm, cooked pasta, or spread on bruchetta.
