Roasted sweet peppers with anchovies and cherry tomatoes

    sweet peppers
  • 2
    garlic cloves, finely chopped
  • 6
    anchovy fillets
  • 250
    g
    cherry tomatoes
  • 2
    ml
    fresh thyme
  • 60
    ml
    olive oil
  • 5
    ml
    salt and freshly ground black pepper, to taste
 

Method

Oven temperature: 180°C
Halve the sweet peppers and remove the seeds and membranes. Place in a roasting tin, insides facing up, and fill each half with garlic, anchovies, cherry tomatoes and thyme.

Drizzle with olive oil, season with salt and freshly ground black pepper and roast in a preheated oven for about 30 minutes.
