Roasted spiced pears and nuts with almonds

    sliced almonds

    firm ripe pears

    dried figs

    dried mixed tropical fruit
  • 80
    ml
    sugar
  • 60
    ml
    butter
  • 5
    ml
    vanilla essence
  • 5
    ml
    cinnamon
  • 2
    ml
    nutmeg
  • sour cream or vanilla ice cream to serve
 

Method

 
Preheat oven to 180 ºC. Toast almonds in a hot pan or oven until golden, about 5 minutes. Remove and set aside. Halve pears lengthwise and cut each half into three wedges, discarding the cores. Quarter figs lengthwise. Chop mixed dried fruit if necessary. Melt together sugar and butter over moderate heat, stirring occasionally, until sugar is melted completely. Stir in vanilla essence, cinnamon, nutmeg and figs until well coated. Roast in oven for 20 minutes or until pears are tender. Stir in almonds. Serve fruit mixture warm with sour cream or vanilla ice cream. Serves 8.
