Roasted pumpkin and chicken salad

Ingredients

  • One cooked chicken
  • 2
    packets of cubed pumpkin
  • olive oil
  • 4
    red onion cut into quarters
  • 8
    big garlic cloves
  • 2
    big chillies
  • 3
    wheels of feta
  • 3
    hands full of fresh basil
  • Salad dressing
  • 100
    ml
    olive oil
  • 30
    ml
    white balsamic vinegar
  • 15
    ml
    whole mustard seeds
  • 1
    cloves garlic, crushed
  • salt and pepper
 

Method

Cover the pumpkin pieces with the  onions, garlic, chilli with olive oil.
Roast in oven for 40 min at 200 °C. Let it cool down.
Break chicken into pieces and remove the skin.
Make the salad dressing by adding all ingredients and mix with the chicken.
Break feta cheese into big pieces and arrange on a serving plate.
Break fresh basil over it and add salt and pepper to taste.
Serve with lovely crusty bread.
