Roasted potatoes with onions and grapes

Ingredients (6)

500 g potatoes — peeled, cubed
4 red onion — quartered
15 ml fresh chillies — 573
salt and freshly ground black pepper — to taste
1 cup grapes — seedless red
fresh basil — to garnish

Method:

Preheat the oven to 200 degrees Celsius.

Transfer the potatoes to a saucepan, cover with water and a little salt and boil for 2 – 5 minutes.

Drain the potatoes in a colander.

Arrange the boiled potatoes and red onion in an oven safe baking tray, drizzle with olive oil and season.

Roast for 20 minutes, remove from oven, turn the potatoes over and roast for another 10 – 20 minutes until crispy and golden.

Add the grapes and roast for another 5 minutes until the grapes burst open.

Serve immediately and garnish with fresh basil.
