Roasted onion, fig and feta salad

Ingredients

  • 4 onions, quartered
  • 30 ml olive oil
  • 60 ml balsamic vinegar
  • 30 ml wholegrain mustard
  • 250 ml feta cheese, crumbled
  • 250 ml asparagus, blanched
  • 4 fresh figs, halved
  • rocket, to serve
 

Method

 
Preheat oven to 180 °C.
Place onions in a baking dish, and add olive oil, balsamic vinegar and mustard.
Roast for 25 minutes or until onions are gooey and caramelised.
Gently add all the other ingredients so they warm up slightly.
Serve on a bed of rocket leaves and pour over the onion juices.
Season to taste.
