Roasted beetroots

  • 2
    bunch of small to medium beetroots
  • extra-virgin olive oil
  • sea salt flakes and freshly ground black pepper
 

Method

 

Top, tail and rinse the beetroots and wrap in foil.
Bake at 180 degrees c for about one hour or until tender when knife is inserted.

Set aside and when cool enough to handle, unwrap,peel and slice into quarters.
Season,and drizzle with olive oil.
