Roasted baby vegetables

Ingredients

  • 8 baby onions
  • 4 baby gem squash
  • 8 yellow baby patty pans
  • 8 baby carrots
  • 8 baby courgettes
  • 8 baby aubergines, halved
  • salt and freshly ground black pepper to taste
  • 4-8 baby corn cobs
  • 60 ml olive oil
  • salt and freshly ground black pepper to taste
  • Topping
  • grated rind of 1 lemon
  • 2 cloves garlic, finely chopped
  • 125 ml chopped Italian parsley
 

Method

 
Prepare all the vegetables and arrange in a roasting pan.
Drizzle with olive oil, salt and pepper and roast at 200 ºC for 30 minutes,
Mix the topping ingredients together, scatter over the vegetables and heat through.
