Roasted baby beetroot

    baby beetroot, scrubbed
  • 4
    garlic cloves, unpeeled
  • handful of fresh thyme
  • 30
    extra virgin olive oil
  • 60
    balsamic vinegar
  • salt and pepper
  • sugar


10 minutes
Fold a large sheet of heavy-duty foil in half and place on a work surface.
Keep the roots of the beetroot intact and cut off the stalks 3 cm from the top.
Place the beetroot, garlic and thyme in the middle of the sheet of foil.
Drizzle with the oil and vinegar and season well with salt, pepper and sugar.
Wrap the beetroot and other ingredients in the foil and roast over coals until the beetroot is soft and done.
