Roast sweet pepper kebabs with corn sauce

  • 2
    each, red, green and yellow peppers
  • vinaigrette
  • CORN SAUCE
  • 60
    ml
    mayonnaise
  • 60
    ml
    plain yoghurt
  • 2
    crushed garlic cloves
  • 2
    finely chopped red chillies
  • 1
    can whole kernel corn, drained
 

Method

 
Slice the peppers into thick strips and roast at 200 °C until soft and the edges begin to blacken.
Thread onto kebabs and moisten with vinaigrette.
Chill until needed, then serve with corn sauce.
CORN SAUCE
Blend together the mayonnaise, yoghurt, crushed garlic cloves and finely chopped red chillies.
Process the corn in a food processor until finer and mix with the yoghurt mixture.
Season and serve with the kebabs.
