Roast lemon and herb chicken

    large chicken
  • salt to taste
  • 3
    handfuls fresh herbs (such as basil, parsley, marjoram), chopped
  • 1
    lemon, halved
  • several fresh bay leaves
  • 2
    sprigs of fresh rosemary
  • 60
    olive oil
  • freshly ground black pepper


15 minutes
Preheat the oven to 180 °C.
Rub cavity with salt and insert salt and herbs under skin at breast.
Stuff cavity with lemon, bay leaves and rosemary.
Slash legs and rub with herbs.
Tie the legs together with string.
Rub chicken with oil and season with freshly ground black pepper.
Roast for 1 1/2 to 2 hours until the chicken is succulent and golden.
