Roast figs

  • BERRY COULIS
  • 450
    g
    fresh berries, washed and hulled
  • 60
    ml
    red wine
  • 45
    ml
    icing sugar
  • FIGS
  • 12
    firm ripe figs
  • 30
    ml
    red wine
  • 15
    ml
    honey
  • AMARETTI MASCARPONE
  • 250
    g
    mascarpone
  • 50
    g
    Amaretti biscuits, crushed
 

Method

 
Press three quarters of the berries through a fine sieve to make a smooth puré.
Mix with the red wine and icing sugar and chill until needed.
Halve the figs and place in a shallow dish.
Mix the wine and honey and brush the outside of the figs with the mixture.
Chill until needed.
Just before serving lightly mix the mascarpone and Amaretti biscuits together.
Thread the figs on skewers and braai over medium-hot coals for 3 to 4 minutes or until just tender.
To serve, spoon the mascarpone mixture into bowls, place the figs on top, scatter the remaining berries over and spoon the coulis on top.
Hint:Use cream cheese instead of the mascarpone and finger biscuits instead of the amaretti biscuits.
