Roast chicken salad

    good-quality mayonnaise
  • 125
    basil pesto
  • 2
    large chicken breasts, roasted and cut into bite-sized pieces
  • 1
    baby cos lettuce
  • 80
    Parmesan cheese, grated
  • salt
  • freshly ground black pepper to taste


In a medium-size bowl combine mayonnaise and pesto. Add chicken and stir to coat thoroughly. Top individual lettuce leaves with chicken. Sprinkle with Parmesan cheese, season, roll up and serve. Serves 4.
