Roast chicken in garlic, chilli and cream

    cloves of garlic, finely chopped
  • 3
    birds eye chilli, finely chopped
  • 1
    fresh parsley, finely chopped
  • salt and black pepper
  • a few tablespoons of olive oil
  • 6
    chicken pieces, skin on
  • 250
    fresh cream
  • roasted butternut and / or rice to serve



Preheat oven to 180 °C.

First off, rub the chicken with finely chopped garlic, chilli, herbs, seasoning and oil.
Arrange in an oven safe baking dish, tightly packed.
Pour in the cream, bake for 40 minutes. Bake a few more minutes to crisp the skin.

Serve with roasted butternut and rice, if you are so inclined. Serves two with leftovers.
