Ingredients

  • 6
    chicken pieces of your choice
  • For the curry sauce:
  • 3/4
    cup
    oil
  • 3/4
    cup
    tomato sauce
  • ½
    cup
    Worcestershire sauce
  • 3
    red onions - chopped
  • 4
    tsp
    quality curry powder
  • 3/4
    cup
    chutney
  • 1
    tsp
    salt
  • 2
    tsp
    mustard powder
  • 4
    pieces of whole star anise
 

Method

Preheat oven to 180ºC.

Place the chicken pieces in an oven pan.
   
Mix the ingredients for the sauce together and pour over the chicken pieces.
   
Cover with foil and bake in the oven for 1 – 2 hours, until chicken falls off the bone!

Serve with wispy rice and a fresh salad or salsa.
