Roast carrot and apricot tsimmes

    carrots, peeled and sliced
  • 8
    fresh apricots, halved and stoned
  • 50
    ml
    honey
  • salt and pepper to taste
  • 200
    ml
    orange juice
  • 15
    ml
    margarine
 

Method

 
Place all ingredients in a 20-22 cm diameter ovenproof dish Roast at 200 ºC for 30 minutes, or until golden. (Carrots will still be slightly crisp.)
