Ricotta herb balls

Ingredients

  • 500
    g
    ricotta cheese
  • 30
    ml
    finely chopped parsley
  • 15
    ml
    chopped thyme or origanum (use more if desired)
  • salt and milled black pepper to taste
  • 5
    ml
    chopped garlic
  • 15
    ml
    good-quality olive oil (you may need a little more)
 

Method

 
Mix all ingredients together well. With wet hands, shape mixture into little balls. Roll them in, or shake over, Zatar and ground rosé pepper. Serve on young salad leaves.
