0.00 white wine — semi-sweet
0.00 brandy
0.00 vanilla — essence
0.00 eggs — separated
0.00 castor sugar
0.00 lemon juice
0.00 white chocolate — grated, whipped cream and chocolate biscuits, to serve

Method:

Melt chocolate in the wine in the top of a double boiler over boiling water.
Add brandy and vanilla essence, then remove from the heat.
Beat egg yolks until fluffy.
Add to melted chocolate, then return to heat.
Stir over low heat until the mixture just thickens.
Remove from heat and cool slightly.
Beat egg whites, gradually adding sugar and lemon juice.
Fold a third of the beaten egg white into chocolate mixture and mix well.
Carefully fold chocolate mixture into remaining egg white mixture.
Serve in a large glass bowl or individual serving bowls.
Top with grated white chocolate and serve with whipped cream and chocolate biscuits.
