250.00 g butter
565.00 ml castor sugar
2.00 eggs — large
400.00 g apple sauce
700.00 ml flour — cake
7.00 ml cinnamon — ground
2.00 ml nutmeg — grated
cloves — ground, pinch
salt — pinch
10.00 ml Baking powder
100.00 g pecan nuts — coarsely chopped
5.00 ml vanilla — essence
30.00 ml brandy
410.00 g apples — sliced
cream — to serve
TOPPING
45.00 ml butter
45.00 ml flour
65.00 ml brown sugar
1.00 ml ginger — ground

Method:

Preheat oven to 180 ºC.
Beat butter and castor sugar in a large mixing bowl until creamy. Add eggs one at a time, beating well after each addition. Stir in apple sauce until combined.
Sift flour, cinnamon, nutmeg, cloves, salt and baking powder into another large bowl. Fold, with pecans, into butter mixture. Stir in vanilla and brandy and fold in apple slices.
Pour mixture into a well-greased 20 cm diameter, 10 cm deep springform pan.
TOPPING: Place ingredients in a saucepan over low heat and mix until butter softens. Spread over batter in pan.
Bake for 1 hour, or until a skewer inserted in centre comes out clean.
Serve with fresh cream.
