Ingredients (9)

375.00 ml rice — cooked
60.00 ml almonds — chopped, toasted
250.00 ml apricots — dried
4.00 spring onions — sliced
10.00 ml orange — zest only
80.00 ml orange juice
2.00 ml salt
white pepper — ground
1.00 eggs — lightly beaten

Method:

Combine the rice, almonds, apricots, raisins, spring onions, orange rind, orange juice, salt and pepper. Add egg, and mix well.
Combine the mixture and use to stuff the cavity of the poultry as well as the hollow above the breast.
