Rice stuffing

    almonds, chopped and toasted
  • 250
    ml
    dried apricots
  • 4
    spring onions, sliced
  • 10
    ml
    orange rind, finely grated
  • 80
    ml
    orange juice
  • 2
    ml
    salt
  • pinch of white pepper
  • 1
    egg, lightly beaten
 

Method

 
Combine the rice, almonds, apricots, raisins, spring onions, orange rind, orange juice, salt and pepper. Add egg, and mix well. Combine the mixture and use to stuff the cavity of the poultry as well as the hollow above the breast.
