Rice salad

Ingredients

    cloves garlic, crushed
  • 1
    green pepper, seeded and diced
  • garlic oil for frying
  • 1
    Litres
    cooked rice
  • 2
    eggs, hard-boiled and finely chopped
  • 250
    ml
    buttermilk
  • 25
    ml
    mayonnaise
  • 30
    ml
    finely chopped parsley
  • 5
    ml
    finely chopped capers
  • 15
    ml
    finely chopped olives (optional)
  • salt to taste
 

Method

Sauté the garlic and green pepper in a little garlic oil until soft. Remove from the pan and drain well on paper towelling. Cool and add to the rice, along with the remaining ingredients. Mix well. Chill until needed. Serves 4.
