Rice salad

    stalk celery, sliced into rings

    spring onions, chopped

    walnuts

    dried apricots, chopped

    kiwi fruit, skinned and sliced
  • SALAD DRESSING
  • 60
    ml
    orange juice
  • 30
    ml
    olive oil
  • 1
    clove garlic, crushed
  • 2
    ml
    ground ginger
  • 10
    ml
    honey
  • 5
    ml
    lemon juice
 

Method

 
Cook the rice in boiling salted water until soft. Drain well and mix with the remaining ingredients for the salad. Arrange in a dish. Mix all the ingredients for the dressing and shake well. Pour over the salad and chill for several hours before serving. Serves 6.
