Rice pudding

    ml
    cream
  • 100
    ml
    sugar
  • 4
    extra-large eggs
  • 2
    egg yolks
  • pinch salt
  • 5
    ml
    vanilla essence
  • 1
    orange (grated rind only)
  • 500
    ml
    cooked rice
 

Method

Preheat the oven to 160 ºC (325 ºF). Spray a 30 x 20 cm oven dish with non-stick spray. Beat together all the ingredients except the rice. Stir in the rice and turn the mixture into an oven dish. Place the dish in an oven pan filled halfway with hot water and bake for 40 minutes or until cooked and set. Serve hot with oranges or quinces in spicy syrup. Serves 6-8.
