Rice pudding

  • 250
    ml
    uncooked rice
  • pinch salt
  • 400
    ml
    low-fat milk
  • 5
    ml
    vanilla essence
  • 45
    ml
    castor sugar (or slightly more, to taste)
  • cubed pineapple, banana and pawpaw
  • 1
    lime, juice and rind
  • mint for garnishing
 

Method

 
Cook the rice according to the packet instructions.
When soft add the salt and milk and heat slowly, stirring occasionally until the rice mixture is creamy.
Add the vanilla essence and castor sugar and mix until the sugar has dissolved.
Mix the pineapple, banana and pawpaw cubes with the lime juice and rind.
Serve the rice pudding hot or cold with the fruit and decorate with mint leaves.
