Rice noodles with bean sprouts (Phad thai)

    rice noodles
  • 30
    ml
    oil
  • 1
    extra-large egg
  • 10
    ml
    fish sauce
  • 15
    ml
    sugar
  • 50
    g
    bean sprouts
  • 150
    g
    tofu, cubed
  • 2
    chives chopped
  • 15
    ml
    finely chopped peanuts
 

Method

 
Soak the noodles in hot water for 30 minutes before using. Heat the oil in a wok. Add the egg and stir-fry (as for scrambled egg) until just done. Add the noodles, stirring continually. Add the lemon juice, fish sauce and sugar. Stir-fry until well blended. Add the bean sprouts, tofu and chives and stir-fry until just done but still crisp. Sprinkle with the finely chopped peanuts. Serve on a flat plate.
