Ingredients (9)

50.00 g noodles — rice
30.00 ml oil
1.00 eggs — extra-large
10.00 ml fish sauce
15.00 ml sugar
50.00 g mixed bean sprouts
150.00 g tofu — cubed
2.00 fresh chives — chopped
15.00 ml peanuts — finely chopped

Method:

Soak the noodles in hot water for 30 minutes before using.
Heat the oil in a wok. Add the egg and stir-fry (as for scrambled egg) until just done.
Add the noodles, stirring continually.
Add the lemon juice, fish sauce and sugar. Stir-fry until well blended.
Add the bean sprouts, tofu and chives and stir-fry until just done but still crisp.
Sprinkle with the finely chopped peanuts. Serve on a flat plate.
