250.00 g bacon — finely chopped
250.00 ml rice — cooked
280.00 g flour — self-raising
salt — pinch
150.00 ml milk
2.00 eggs — extra large, whisked
30.00 ml butter — melted

Method:

Preheat the oven to 180 ºC (350ºF). Spray a 22 X 11 x 7 cm loaf tin with non-stick spray.
Fry the bacon till crisp. Mix with the rice, self-raising flour and salt. Blend the milk, eggs and butter and add to the dry ingredients. Mix lightly and spoon into the prepared loaf tin. Bake for 60 minutes or till the bread is done. (Cover the loaf with aluminium foil if the top browns before the loaf is done.) Turn out onto a wire rack and cool slightly.
Serve with butter.
Makes a medium-sized loaf.
