Rice and sausage

    onion, finely chopped

    chutney

    uncooked rice
  • 500

    uncooked beef sausage, cut into pieces
  • 410

    apricot halves (reserve the juice)
  • chives for garnishing
 

Method

45-60 min
 
Preheat the oven to 180 ºC. Spray an ovenproof dish with non-stick spray. Fry the onion in oil until soft and translucent. Add the curry powder and turmeric and stir-fry gently. Add the boiling water, chutney, salt and black pepper. Cook for a few minutes. Place the uncooked rice in the bottom of the prepared dish. Arrange the pieces of sausage and apricot halves on top. Sprinkle with the onion mixture and pour over the apricot juice. Cover with aluminium foil and bake for 45-60 minutes or until the rice is tender and most of the liquid has been absorbed. Serve hot with a salad if desired. Serves 6.
