Rice and lentil salad

    brown lentils, sorted
  • 250
    g
    white rice
  • 190
    ml
    currants
  • 125
    g
    dried apricots, shredded
  • 30
    ml
    oil
  • 20
    ml
    curry powder
  • 5
    ml
    ground cumin (jeera)
  • 100
    g
    almond slivers
  • 30
    ml
    soft brown sugar
  • 1
    lemon, grated rind
 

Method

 
Rinse the lentils and boil in salted water until tender. Drain well and set aside. Boil the rice in salted water until soft and drain well. Mix with the lentils. Soak the currants and apricots in boiling water. Heat the oil in a large saucepan and fry the curry powder and cumin for about a minute. Add the almond slivers and fry briefly. Add the sugar, lemon rind, currants and apricots and mix. Add the lentils and rice and mix. Simmer for a few minutes until the flavours are well blended. Serve hot or cold.
