Rice and cheese salad

    rice
  • 250
    g
    Cheddar cheese, diced
  • 125
    g
    cherry tomatoes, quartered
  • 1
    celery stalk, thinly sliced
  • 30
    ml
    capers
  • 2
    gherkins, sliced into rings
  • 100
    g
    ham, preferably Parma ham
  • SALAD DRESSING
  • 60
    ml
    mayonnaise
  • 30
    ml
    white wine vinegar
  • 15
    ml
    wholegrain mustard
  • salt and freshly ground black pepper
  • 30
    ml
    fresh mixed herbs, finely chopped
 

Method

 
Cook the rice in boiling salted water until tender, drain and rinse under cold water. Mix all the ingredients for the salad dressing together and stir into the rice. Add the rest of the salad ingredients and chill until just before serving.
