Rice and cheese casserole

    cooked rice

    ham, finely chopped

    extra-large eggs, whisked
  • 250

    milk
  • 250
    ml
    Cheddar cheese, grated
  • salt and freshly ground black pepper
  • 2
    hard-boiled eggs, sliced

Preheat the oven to 190 ºC (375 ºF). Spray a 20 x 22 cm ovenproof dish with non-stick spray. Combine the rice, ham, whisked eggs, milk and half the cheese in a mixing bowl. Season with salt and black pepper to taste. Turn the mixture into the prepared dish and arrange the slices of hard-boiled egg on top. Sprinkle with rest of cheese and bake for 45 minutes or until golden brown. Serves 4.
