Ribbon noodles with herbed mushrooms

    g
    fresh button mushrooms, wiped clean with a damp cloth and sliced
  • 50
    ml
    butter
  • 30
    ml
    olive oil
  • 30
    ml
    chopped spring onions
  • 60
    ml
    chopped fresh basil
  • freshly ground black pepper
  • 450
    g
    ribbon noodles
  • 15
    ml
    grated Parmesan cheese
 

Method

 
Fry the mushrooms in the butter and oil until done. Add the spring onion and herbs and season generously with black pepper. Cook the pasta in enough rapidly boiling, salted water until just done, and drain. Add the mushrooms, mix and spoon into hot serving plates. Sprinkle with Parmesan cheese and serve immediately. Serves 4.
