Rhubarb salad dressing

Ingredients

  • 50
    ml
    puréed cooked rhubarb
  • 60
    ml
    olive oil
  • 30
    ml
    peanut or walnut oil
  • 15
    ml
    apple cider vinegar
  • 10
    ml
    creamed horseradish (optional)
  • 2
    ml
    sugar
  • salt and freshly ground black pepper to taste
 

Method

 
Place all ingredients in a glass bowl and beat with a whisk to form a thick sauce. Season to taste. Serve with a chicken or smoked fish salad.
