Rhubarb pudding

    sugar
  • 30
    ml
    butter
  • 3
    eggs
  • 750
    ml
    milk
  • 250
    ml
    cake flour, sifted
  • 10
    ml
    baking powder
  • 750
    ml
    rhubarb, chopped
  • custard for serving
 

Method

 
Preheat the oven to 180 °C and lightly grease a large ovenproof dish.
Beat the sugar and butter until well blended.
Add the eggs and milk and beat well.
Add the flour and baking powder and mix well.
Fold in the rhubarb, then pour the batter into the prepared dish. Bake for about one hour or until done.
Serve with custard.
