Ingredients (14)

1.00 cabbage — red
1.00 red pepper — large, sliced
1.00 radishes — sliced
16.00 cherry tomatoes — small
1.00 red onion — or white onion, sliced
45.00 ml fresh parsley — chopped
2.00 beetroot — cooked, peeled, diced
SALAD DRESSING
30.00 ml lemon juice — fresh
50.00 ml vinegar — grape
3.00 ml mustard — prepared
125.00 ml oil
sea salt and freshly ground black pepper
2.00 garlic — cloves, crushed
10.00 ml fresh mixed herbs — chopped

Method:

Mix the cabbage, red pepper strips, radishes and cherry tomatoes in a large mixing bowl.
Pour boiling water over the onion slices and blanch for two to three minutes. Drain and add to the salad with the chopped fresh parsley. Add the diced beetroot and mix lightly.
Beat or shake the salad dressing ingredients together and pour over the salad just before serving.
Serve the salad cold.
