    head red cabbage, shredded
  • 1
    large red pepper, sliced into strips
  • 1
    small bunch radishes, sliced
  • 16
    small cherry tomatoes
  • 1
    large red or white onion, sliced

    chopped fresh parsley
  • 2
    large cooked beetroots, peeled and diced (optional)
  • SALAD DRESSING
  • 30
    ml
    fresh lemon juice
  • 50
    ml
    grape vinegar
  • 3
    ml
    prepared mustard
  • 125
    ml
    oil
  • salt and freshly ground black pepper
  • 2
    cloves garlic, crushed
  • 10
    ml
    chopped fresh mixed herbs
 

Method

 
Mix the cabbage, red pepper strips, radishes and cherry tomatoes in a large mixing bowl. Pour boiling water over the onion slices and blanch for two to three minutes. Drain and add to the salad with the chopped fresh parsley. Add the diced beetroot and mix lightly. Beat or shake the salad dressing ingredients together and pour over the salad just before serving. Serve the salad cold.
