Red-onion soup

Ingredients

  • 2
    large red onions
  • 20
    ml
    butter
  • 200
    ml
    vegetable stock
  • 400
    ml
    beef stock
  • 150
    ml
    dry white wine
  • 15
    ml
    fresh thyme or lemon thyme
 

Method

15 minutes
 
Heat butter in a saucepan and fry onions gently for about five minutes, until soft.
Add the stock, wine and thyme and simmer for 10 minutes.
Season to taste with salt and freshly ground black pepper and serve with crusty bread.
