  • 10
    small, fresh red chillies, washed and dried well
  • 1
    small bunch fresh thyme, washed and dried well
  • 300
    ml
    extra-virgin olive oil
 

Method

 
Sterilise an attractive bottle which can be well sealed. Place the chillies and thyme in the empty bottle. Fill with olive oil and seal to achieve an airtight seal. Stand for at least two days before use. Makes 300 ml flavoured oil.
