Red cabbage with cashew nuts

    small red cabbage, thinly sliced

    sun-dried tomato pieces
  • 6
    spring onions, sliced
  • 50

    cashew nuts
  • SALAD DRESSING
  • 10
    ml
    Dijon mustard
  • salt and freshly ground black pepper
  • pinch sugar
  • 30
    ml
    white wine vinegar
  • 190
    ml
    olive oil
  • 65
    ml
    mixed fresh herbs (such as parsley, chives, dragon, dill, basil, mint and origanum) finely chopped
 

Method

 
Mix the mustard, salt and pepper, sugar and vinegar in a mixing bowl and stir well. Add the olive oil a little at a time while stirring continuously. Add the fresh herbs and mix well. Pour over the salad. Serves 6.
