Red beans & sausages

    oil

    bacon, diced

    large onion, chopped
  • 1
    large clove garlic, crushed

    smoked ham, chopped
  • 1
    celery stalk, diced
  • 2
    small red chillies, seeded and chopped
  • 1
    bay leaf
  • 2
    ml
    allspice
  • 1
    Litres
    beef stock
  • 820
    g
    red kidney beans, drained and rinsed
  • 750
    g
    smoked spicy sausage, thickly sliced
  • salt and freshly ground pepper
 

Method

 
1. Sauté the bacon in oil until crisp. Add the onion, garlic, ham and celery. Cook, stirring occasionally, for 10 minutes. Add the chillies, bay leaf and allspice. Reduce the heat and stir in the stock and the drained beans. Simmer, covered, stirring occasionally for 45 minutes. 2. Place 125 ml of the beans in a bowl and mash with a fork. Stir back in. Add the sausage. Simmer uncovered, until the mixture has thickened, about 45 minutes longer. 3. Discard the bay leaf and add salt and pepper to taste. Serve with rice. Serves 4.
