    brown sugar

    cake flour

    cacoa powder
  • 8
    ml
    bicarbonate of soda
  • 5

    vanilla essence
  • 40

    red food colouring
  • 200
    ml
    milk
  • For the filling:
  • 125
    g
    thick cream cheese
  • 80
    g
    butter
  • 5
    ml
    vanilla essence
  • 500
    ml
    sifted icing sugar
 

Method

Preheat oven to 180°C. Cream the butter and the sugar until light and fluffy.

Add the egg and beat well.

Add vanilla and food colouring to the milk.

Sift the flour, cocoa and bicarbonate of soda and add to the butter mixture alternating with the milk mixture.

Spoon the mixture into a piping bag with a 1cm wide plain nozzle and pipe onto a baking tray lined with non-sticking baking paper. Make sure to leave room for spreading.

Bake at 180°C for 10-15 minutes until firm to the touch. Remove and cool on the tray.

For the filling: Cream together the cheese and butter until smooth.  Add the vanilla and mix well. Add enough icing sugar to make a firm icing. Sandwich two halves together with the cream cheese icing.
