Red Cabbage With Apple

    red onion, chopped

    red cabbage, shredded
  • 250

    green apples, peeled, cored and cubed

    beetroot, peeled and cubed (you can also use bottled beetroot)

    lemon
    juice of ½ lemon
  • 60

    red wine vinegar
  • 125
    ml
    red wine
  • 45
    ml
    sugar
  • 1
    stick
    cinnamon
  • 1
    clove
  • 1
    bay leaf
 

Method

1. Heat the oil in a saucepan over a medium to high heat. Add the onion and fry for two or three minutes until soft, but not yet browned.
2. Add the cabbage, apple and beetroot and stir well. Add the lemon juice, vinegar and wine, and stir well.
3. Add the sugar and spices, as well as salt and freshly ground pepper to taste. Cover and cook for approximately one hour.
4. Remove the clove, cinnamon stick and bay leaf and serve as a side dish.
