Real porridge

  • 125
    ml
    (1/2 cup) rolled oats
  • 125
    ml
    (1/2 cup) barley flakes
  • To serve:
  • sunflower seeds, sesame seeds, linseeds
  • brown sugar or honey
  • cinnamon
  • milk
  • cream or butter
 

Method

 
Pour 4 cups of water into a medium saucepan, add a pinch of salt and bring to the boil. When it has reached a rolling boil, gradually tip in the grains (pour in a 'steady stream'), stirring as you go(this prevents lumps). Turn down the heat and simmer for 20 minutes, stirring constantly.

Take the pot off the heat, replace the lid and leave to stand for 5 minutes. Lightly crush the linseeds in a mortar and pestle or grind them in a spice grinder (this aids the absorption of nutrients). Serve the porridge in bowls with milk, sugar and the seeds strewn over it, with any of the other accompaniments you choose.
