Ravioli with roasted pepper and orange sauce

    red pepper, halved and seeded

    yellow pepper, halved and seeded

    olive oil
  • 1
    onion, sliced
  • 2
    cloves garlic, crushed

    soft brown sugar
  • 1
    orange, zest and juice

    readymade ravioli


15 minutes
Drizzle half the olive oil on the peppers and roast at 200 °C for 20 minutes or until tender.
Heat remaining oil in a large frying pan and sauté onion and garlic for one minute.
Add sugar, juice and zest and cook for a minute.
Transfer to a blender, add peppers and blend until smooth.
Season to taste.
Cook the ravioli according to the packet instructions.
Serve with the sauce topped with Parmesan and fresh mint.

Add four cooked, sliced chicken breasts to the sauce and serve with pasta.
