500.00 ml tomato sauce
250.00 g pasta
500.00 g ricotta cheese
100.00 g parmesan cheese — or pecorino cheese, grated
1.00 hand vol fresh basil

Method:

Rol die pastadeeg in lang stroke uit. Skep die ricotta-vulsel
met ‘n teelepel ver uitmekaar op die pastastroke. Smeer ‘n
bietjie water met ‘n kwassie om die rande en plaas nog ‘n
pastastrook bo-op.

Druk die pasta-vel goed vas en maak
seker dat daar nie lugblasies is nie. (As lugblasies vorm,
sal die pasta-sakkies oopkook.) Druk uit met ‘n koekie- of
ravioli-drukker. Strooi meel op ‘n bakplaat en plaas die
ravioli bo-op.

Bring water tot kookpunt in ‘n groot kastrol.
Dompel die ravioli versigtig in die kookwater, en wanneer
hulle na bo kom, haal dit versigtig uit en hou in ‘n bak op
‘n warm plek.

Skep die tamatiesous oor en sit voor met
gebreekte, vars basiliekruid en parmesaan-kaas.
