Raspberry pizza

  • 150
    g
    puff pastry, thawed
  • 200
    g
    raspberries
  • 80
    g
    sugar
  • icing sugar to serve
  • mascarpone cheese to serve
 

Method

 
Preheat oven to 220 ºC. Cut out 4 circles of puff pastry with a biscuit cutter, place on a lightly greased baking sheet and bake for 15 minutes, or until well risen and golden. Remove from oven and set aside. Place raspberries and sugar in a medium-sized saucepan and heat over low heat until sugar has dissolved, stirring occasionally. Divide raspberries between pastry rounds (flatten pastry slightly if it has risen unevenly). Place under a preheated grill for 1 to 2 minutes, until fruit is warm. Serve hot with a sprinkling of icing sugar and a dollop of mascarpone cheese.
