Raspberry and grapefruit granita

Ingredients 4
Servings
Time 30min + Freezing time
  • 600
    ml
    berries or other fresh fruit
  • 500
    ml
    fresh fruit juice
  • 125-250
    ml
    castor sugar (depending on the sweetness you prefer)
  • 25
    ml
    lemon juice
 

Method

 
Place the fruit and 100ml of the juice into a liquidiser and blend until smooth. Press through a sieve to remove the seeds if you are using berries. Mix with the sugar, lemon juice and remaining fruit juice. Stir until the sugar has dissolved.

Pour into a container with a lid. Freeze for four hours, then remove from the freezer and break up with a fork. Return to the freezer and stir with a fork every 30 minutes for a further four hours. Break up with a fork again just before serving.
