    dried apricots, finely sliced
  • 250
    ml
    brown grape vinegar
  • 675
    ml
    brown grape vinegar
  • 1
    kg
    white sugar
  • 15
    ml
    ground coriander
  • 35
    ml
    ground ginger
  • 5
    ml
    chilli
  • 5
    ml
    salt
  • 1
    onion, finely chopped
  • 1
    kg
    seedless raisins
 

Method

 
Soak the apricots in the 250 (1 c) vinegar overnight. Place in a saucepan with the remaining ingredients and heat slowly until the sugar has dissolved. Bring to the boil and simmer, stirring occasionally, until the mixture is no longer watery and a flavoursome chutney has formed. Bottle while still hot. Makes 2 litres chutney.
