    extra-large eggs
  • 150
    ml
    honey
  • 150
    ml
    wholewheat flour
  • 2
    ml
    salt
  • 750
    ml
    seedless raisins
  • 300
    ml
    ground almonds
  • whipped cream for serving
 

Method

40-60 min
 
Preheat the oven to 180 ºC and spray a 22 cm round cake tin with non-stick spray. Line the bottom of the cake tin with baking paper and spray once more. Beat the eggs in a large mixing bowl until light and gradually beat in the honey. Combine the wholewheat flour, salt, raisins and almonds and fold into the eggs. Turn the batter into the prepared cake tin. Bake for 40-60 minutes or until a testing skewer comes out clean. Cool slightly in the tin before turning out. Serve lukewarm with cream. Makes one cake.
